I like this advice:
"if you're worried about security updates, or it getting messed up as a result of it, don't put the thing on the fucking internet
your printer doesn't need to be on the internet
you can put it on your local network and you can block it from ever connecting to the internet so you don't have to worry about security issues ..."
@ahimsa_pdx @researchbuzz @ai6yr The problem with that advice is that's it's true, right up until the point where it isn't. Manufacturers of all kinds have been selling hardware for years that must be connected to external servers, or it won't work.
I have a whole bag full of Belkin security cameras that do not work because Belkin shut the servers down. Thankfully, I didn't buy them, my stepfather did. I did buy a Jawbone UP. Useless now, without the servers.

For me, this strategy has worked. My printer is not on the internet. And my new TV (after 16 years we got a new one) is also not on the internet. Thankfully, both of them work just fine without being connected.
But I understand your point that some devices might have issues.

Try running a newish HP printer that's not connected to the Internet.
